GARDENING FOR GOOD

The hotel's restaurant was nominated as one of the best in Colombia and focuses on rescuing lost flavors of Colombia. Chefs walk the property each day harvesting crops from the organic gardens as well as non-traditional edible plants thought by many to be weeds, but that bring out surprising flavors.

The team is creating 86,000 square feet of organic gardens and food forests. Staff lead guests on tours through the gardens sharing the principles of permaculture (which is a sustainable way of farming that leaves the soil more enriched than when you started) and teaching about the rainforest.

SPREADING THE GOSPEL OF PERMACULTURE

Santiago Giraldo is a co-founder and General Manager of Cannúa. Before starting Cannúa he worked in hotels in Buenos Aires, Argentina, and in his home town of Medellín. Santi studied philosophy at the Universidad de Antioquia, which helped him form his deep sense of commitment to Cannúa’s permaculture philosophy.

GARDEN AND PERMACULTURE TOUR

Cannúa is creating almost 86,000 square feet of organic gardens and food forests based on permaculture principles. Guests are invited to take a free guided tour of the property to learn the basic design philosophy, ethics and principles of permaculture and see how they were applied to the construction
of Cannúa. And for those who want to get their hands dirty can help the gardeners plant some vegetables, herbs or even a native tree as part of their
conservation efforts.
